Fruit of the basque tradition, the axoa is originally a meat simmered around the fireplace, comforting after days of hard work in the mountains. Traditionally based on veal or pork, the axoa was today re-visited by our care to highlight the Landais duck.
Some peppers, a dash of piment d'Espelette, a sauce jealously protected by our head chef, all, simmered for hours.
